The Recipe Stock Requirements form lists the amount of each ingredient required to produce the selected recipe as configured in the Recipe Details form.
From Polygon Back Office,
Click the Recipes button on the toolbar to open the Recipes File,
Highlight an existing recipe and click the Change button. This will load the Recipe Details form for the selected recipe,
Then click the Stock Requirements button to open the Recipe Stock Requirements Update Form.

The information on this form is divided into three tabs - Stock Requirements, Recipe Tree and Mis En Place. These tabs are described below:
This shows every ingredient used in this recipe tree, the amount required and the stock holding. An X next to the ingredient means the ingredient is out of stock an R next to the ingredient means you can make up the recipe but a re-order is required. Each ingredient will be displayed with Recipe consumption, quantity required, quantity on hand and cost summary.
For Mult-Department Users: If you have a multi-departmental system, choose the departmental stock holding from which the ingredients for the recipe will be taken from the Department drop down list.

The Recipe Tree graph table shows the ingredients that belong to the recipes and stock items which make up this recipe. Note that each batch recipe in the tree “branches out” to display its own items. With this tree you can easy identify the ingredient make up of even the most complex recipe or function.

The mis en place details the amount required for each batch recipe ingredient in the recipe tree. Highlight the ingredient you wish to feature by clicking on it.
