Recipe Details

From Polygon Back Office,

Access the Recipes File by clicking the Recipes button on the toolbar,

Click the New Button to create a new Recipe, or,

Highlight an existing Recipe and click New From to create a new Recipe based on the highlighted Recipe, or,

Highlight an existing Recipe and click the Change button to edit the highlighted recipe.

General

Recipe Name

Enter a name for this recipe.

Date

Today’s Date is inserted automatically but can be changed as required.

Active

This setting will be ticked automatically. If you wish to make a recipe inactive un-tick the Active tick box.

This is a batch recipe

Batch recipes are those recipes which are also ingredients for other recipes.  For example, mashed potato includes potato, butter, milk and salt.  However, mashed potato may also be used as an ingredient in another recipe.  Therefore, the recipe for mashed potato can be classified as a batch recipe.

Recipe Portion Details (g/ml)

Number of portions

This refers to the number of people (portions) the recipe will provide for.

Optimum Size

This is the optimum amount per portion in grams (g) or milliliters (mls).

Actual Size

This is a measure of the actual size of the portion based on the recipe ingredients.

Status

This refers to the availability of ingredients required for the recipe:

•Balanced – The required ingredients are currently on hand.

•Surplus – There are additional ingredients on hand.

•Shortage – There is a shortage of ingredients and this recipe cannot be made

Stock Requirements

This button displays the Stock Requirements Update Form where you can see a list of each ingredient required to produce the recipe.  

Recipe Pricing Details

The Recipe price can be entered in two ways, either Enter GST Exclusive Price - This refers to the sale price of the Recipe.  Alternatively the Sale Price can be automatically calculated as a percentage of the Recipe Cost by entering a Recipe Cost Percentage.

For example, if you set the Recipe Cost Percentage at 50% this means that total cost of producing the recipe is half the Sale Price.

Recipe Portion Profitability

These figures will be automatically calculated by the system:

•Portion Cost - This is the total cost of all the ingredients in the recipe;

•Return/Portion - This is your return on the portion if it is sold at the price displayed in the Sale Price section;

•Total Recipe Return - This is the total return on the recipe.

PLU Assignment

Assign PLUs

In order to track recipe usage perpetually, a recipe should be assigned to one or more PLUs.  

To do this:

•Click on the Assign PLUs button;

•Make the appropriate selection(s) from the PLU File and click the Select button.  

Alternatively, this can be done when creating PLUs.  See section PLU Item Details > Polygon Inventory for more information

View Assigned PLUs

Highlight a PLU from the Assigned PLU Items list and click this button to view the details of the selected PLU.  

To Delete PLU Assignments

Highlight the PLU and click on the Delete Assignment button to un-assign this PLU or click on the Delete All Assignments button to clear all PLU assignments to this recipe.

Record any specific preparation instructions for this recipe in the free-text field.

Recipe Ingredients are shown at the bottom of the form.  Ingredients can be either Stock Items or Batch Recipes (Recipes which are available for use in other Recipes).  Ingredients can be added to or removed from recipes here.  

To add a new Recipe Ingredient, select Stock Item or Batch Recipe from the left most column (circled in green).  Select a Stock Item or Batch Recipe from the form which is displayed, then fill in the following details for this ingredient:

•Amount Type - Select either Gross or Net from the Amount Type.  This is how the ingredient will be measured in the recipe.  A Gross amount will be the quantity before any wastage.  A Net amount will be the quantity after any wastage;

•Use By - The Used By field will automatically be entered based on how the Stock Item or Batch Recipe is set up;

•Serve Amount - Enter the Serve Amount.  This determines how much of this ingredient is used in the recipe.  

The Extended Figures below are automatically generated,

•Extended - Units/Kg/L - Displays the amount of this ingredient which will be used in the recipe.  Equal to the number of portions multiplied by the serve amount;

•Extended - Yield (KG/L) - This figure indicates how much of the ingredient is actually in the final product.  

•Extended - Cost - Displays the cost of using the entered quantity of this ingredient.  

Repeat these steps for each recipe ingredient, then click OK to save the Recipe.

Removing an Ingredient - Click the Delete Button at the right of the for to remove the selected ingredient.
